Carriers are substances used to dissolve, dilute, disperse or otherwise physically modify a food additive, flavouring, enzyme or nutrient without altering its function, in order to facilitate its handling, application or use. Acids are substances that increase the acidity of a food and/or impart a sour taste. Acidity regulators are substances that alter or control the acidity or alkalinity of a food. Anti-caking agents are substances that reduce the tendency of individual particles of a food to adhere to one another.

Anti-foaming agents prevent or reduce foaming. Bulking agents contribute to the volume of a food without contributing significantly to its available energy value. Emulsifiers make it possible to form or maintain a homogeneous mixture of two or more immiscible phases, such as oil and water, in a food. Emulsifying salts convert the proteins of cheese into a dispersed form, bringing about homogeneous distribution of fat and other components. Firming agents make or keep the tissues of fruit or vegetables firm or crisp, or interact with gelling agents to produce or strengthen a gel.

Flavour enhancers enhance the existing taste and/or odour of a food. Foaming agents make it possible to form a homogeneous dispersion of a gaseous phase in a liquid or solid food. Gelling agents give texture to a food through the formation of a gel. Glazing agents, including lubricants, when applied to the external surface of a food, impart a shiny appearance or provide a protective coating. Humectants prevent foods from drying out by counteracting the effect of a low-humidity atmosphere, or promote the dissolution of a powder in an aqueous medium.

Modified starches are substances obtained by one or more chemical treatments of edible starches, which may have undergone a physical or enzymatic treatment, and may be acid or alkali thinned or bleached. Packaging gases are gases other than air, introduced into a container before, during or after placing a food in that container. Raising agents are substances or combinations of substances that liberate gas and thereby increase the volume of a dough or batter.

Flour treatment agents, other than emulsifiers, are substances added to flour or dough to improve its baking quality. Finally, contrast enhancers are substances which, when applied to the external surface of fruit or vegetables following depigmentation of certain parts (for example by laser treatment), help to distinguish those parts from the rest by colouring them following interaction with certain components of the epidermis. Together, these twenty-seven categories cover every technological role an additive can lawfully play in the European food supply.
