e331 Sodium Citrates

Food additive in the category of antioxidants, also having acidity regulation, preservative, flavoring and sequestrant functions. It comes in the form of E 331(i) – monosodium citrate, E 331(ii) – disodium citrate or E 331(iii) – trisodium citrate, all of these being sodium salts of citric acid. It is used in the quantities on the recipes in products based on milk, vegetables, fruits, emulsified or non-emulsified animal or plant oils and fats, partially or fully dehydrated milk, in fresh minced meat dishes.
