e333 Calcium Citrates

Food additive in the category of antioxidants, also having acidity regulation, preservative, flavoring and water softening functions. It comes in the form of E 333(i) – monocalcium citrate, E 333(ii) – dicalcium citrate or E 333(iii) – tricalcium citrate, these being calcium salts of citric acid. It is used in the quantities on the recipes in products based on milk, meat, fish, fruits, vegetables, fats, in bakery, pastry, confectionery products, sauces, spices etc., and in some food supplements meant for people with gastric or calcium deficiency.
