It comes in E 440(i) – pectin, E 440(ii) – sodium pectate, E 440(iii) – potassium pectate, E440(iv) – ammonium pectate or E440b – amidated pectin. It is used in the quantities on the recipes especially in fruit products: juices, nectars, concentrates, jams, jellies, marmalades. It is also used as a solvent for other food additives.
