e965 Maltitols

Food additive with caking, bonding, stabilizing, emulsifying, substance-support for other additives and sweetening functions. It is a polyol obtained by hydrogenation of maltose from starch. In the same quantity, maltitol has 90% the sweetness of sugar, but only half its calories. In food manufacturing technology, it has the same properties as sugar, without that of being able to be caramelized.
It comes in the form of E965(i) – maltitol or E965(ii) – maltitol syrup.
Due to its solubility and stability at high temperatures, this sweetener is successfully used in heat-treated products. Thus, it can be used in the quantities on the recipes in confectionery, pastry and bakery products, in preserved fruit products, various cocoa, fat, milk, fruit, starch desserts, breakfast cereals, dietetic products and food supplements etc. Maltitol metabolizes very slowly, which leads to a big part of it being eliminated, unchanged.
