e967 Xylitol

Food additive with caking, bonding, stabilizing, wetting, emulsifying, substance-support for other additives and sweetening functions. It is a polyol first obtained in Finland, from birch wood, being later popularized in Europe as a safe sweetener for all consumers and very fit for diabetics, because it didn’t raise blood sugar. Later there have been established methods of obtaining it from corn or hardwood. In the same quantity, without containing any carbohydrates, xylitol is just as sweet as sugar, but only has 64% its calories. The taste of xylitol is very resembling to that of sugar, but also has a freshening, mentholated touch.
Due to its solubility and stability at high temperatures, this sweetener is successfully used in heat-treated products. Thus, it can be used in the quantities on the recipes in confectionery, pastry and bakery products, in preserved fruit products, various cocoa, fat, milk, fruit, starch desserts, breakfast cereals, dietetic products and food supplements etc. Cannot be used in products that contain yeasts, because it destroys them.
